Slow Cooked Spiced Pork - another fave Ina G. Recipe from her "Make It Ahead" cookbook. Perfect for entertaining with minimal effort - prep is less then 10 minutes! 7-9 lb Pork butt with a layer of fat on top, make a cross hatch in the fat, poke a dozen or so knife cuts all over and then rub the Cuban inspired spices over the entire thing. You can do this 24 hrs ahead of time and refrigerate until ready to roast. The spice mixture is made with onion, jalapeño, garlic, cumin, chipotle chili powder, salt, pepper, and olive oil all combined into a paste in a food processor. Roast at 300 degrees for 6-7 hours with 2 cups of Pinot Grigio in the bottom of the roasting pan. It's melt in your mouth tender. All my guests raved over the flavor and how moist the meat was. Definitely the easiest dinner I've cooked for a large group of people.
