Apple dumplings when you need some comfort. Peel and core crisp, fall apples. Roll out your favorite pie dough into squares and sprinkle with a mix of cinnamon and brown sugar. Place apple in center of dough. Put a few small pats of butter in the core of the apple along with some more of the cinnamon and brown sugar mix. Wrap up pie dough over whole apple. Bake for 30 minutes. While baking, make a caramel sauce with brown sugar, butter, a touch of cream and a little water. Pour into baking dish and complete baking for another 10 to fifteen minutes. Top with vanilla ice cream.
