The BEST Savory Oatmeal! This was sooooo good!
1 cup steel cut oats
1-2 teaspoons olive oil or butter
1 chopped shallot
8 ounces sliced mushrooms
1 head dinosaur kale, stems removed, leaves chopped into ribbons- or bagged spinach for simplicity
Salt and pepper to taste
½ teaspoon dried thyme
2 teaspoons mellow white miso
2 tablespoons tahini
1 tablespoon tamari
¼ cup nutritional yeast
Cook the oats, 3-1/2 water to 1 cup oats;
Use the oil or butter to sauté the mushrooms, shallots and thyme.
In a small bowl mix 2 TBL water w/ the tahini, miso and tamari
When oats are done stir in tahini mixture and nutritional yeast.
Add vegetables and mushrooms. Serve topped w/ avocado, green onions, chopped cashews, whatever sounds good!
