Fig and apple chutney, to spoon over a beautiful piece of roasted pork. Sautée a small minced onion in some kind of fat (I used duck), add grated ginger, chopped figs, a handful of brown sugar, a glass of cider vinegar, zest and juice of an orange and then go crazy with warm spices. Tonight's stars were anise, cinnamon, allspice, cloves and Aleppo pepper. Simmer for 20 minutes or till jammy and salt to taste.
