Couscous cooked with vegetable stock and garlic, once cooled, mixed with feta cheese, baby spinach, cherry tomatoes, leftover chicken, peppers and chopped cucumber. Make in big batches, can last at least 4 days in the fridge. Great either heated up or eaten cold!
