Double Crunch Granola Bars
Originally from Quaker Oats Recipe Book, updated and modified!
4 cups quick oats
1 1/2 cups chopped pecans, toasted
1/2 cup shredded unsweetened coconut
3/4 cup packed brown sugar
3/4 cup plus 1 tbsp unsalted butter, melted and browned
1/2 cup honey
1 tsp salt
1 tsp vanilla
Gently toast pecans in the oven at 300 degrees. Mix together all dry ingredients in a large bowl. Melt butter on the stove and allow to brown, strain off browned milk solids. Add strained melted butter, honey and vanilla to dry ingredients and stir thoroughly to incorporate the wet ingredients evenly. Press into a well greased 15.5x10.5 sheet pan. Bake at 450 for 10-12 minutes, I recommend checking at 10 minutes.
