adventures in pre-Thanksgiving, super-flaky, all-butter handpie testing continue tonight with an apple-cinnamon filling. and, a scoop of vanilla bean ice cream for good measure.
the filling is a simple mixture, brought to a boil then simmered (covered) for 6 minutes: 2 cups of adorable little honeycrisp apples from my local farmer's market (peeled and roughly chopped into half-inch chunks), 2 tsp. fresh lemon juice, 1 heaping tsp. cinnamon, 1/2 tsp. nutmeg, 1/8c sugar, 1 tbsp. KAF Instant ClearJel, and 1 cup water.
