Best butter chicken I've made so far! Even though I ran out of butter and heavy cream and had to substitute coconut oil and evaporated milk. Served this with saffron rice. Take the time to marinate the chicken and caramelize the onions and you won't be sorry!

Marinade

Chicken thighs
Chilli powder
Garam masala
Garlic
Ginger
Salt

Sauce

2 Tbl Coconut oil
2-3 Onions
1 Tbl Garlic
1 Tbl Ginger
1 Tbl Garam masala
1/2 tsp Cardamom
1/2 tsp Cinnamon
Saffron
Chilli powder
Salt
15 Cashews
3 Tomatoes
2 Tbl Tomato paste
Lemon juice
1/4C evaporated milk
1/2C half and half

Sauté marinated chicken in coconut oil until almost done and remove from pan.

Add chopped onions to pan and cook until nicely caramelized. Add garlic and ginger and spices let cook for a minute. Add chopped tomatoes, tomato paste, and cashews cook down tomatoes. Put this in blender and purée until very smooth. If you still have bits of tomato peel strain mixture and put it back in pan with the chicken. Add whatever milk you are using and Let it simmer for about 20 mins.
