Vegan Ricotta Cheese

2 cups raw unsalted cashews soaked overnight,
3/4 cups drinking water,
juice of 1 lemon,
nutritional yeast, sea salt, garlic, onion powder.
Blend until smooth & creamy.
Perfect for stuffed shells, veggie lasagna, ricotta toast with bruschetta, etc. Yum!
