Butternut squash cake inspired by those grocery store spanish bar cakes i was craving the other day. Raisins and currants soaked in marsala, chopped walnuts...2 c squash puree (boiled made a better cake than roasted squash) 1 c oil, 4 eggs, 1 2/3c sugar, 2 c flour, scant bit of cocoa, cinamon, nutmeg, allspice. Baked in 2 cake pans @350... frosted in buttercream and finished with toasted coconut chips
