Sunday meal prep!
Asian Chicken Ramen Soup
1. Chop onions, garlic, carrots, bell peppers and cilantro.
2. In a pot, sauté the onions, carrots, and bell peppers. Add the garlic and allow to cook. Add in salt, pepper, curry powder and cayenne.
3. Add chicken stock, coconut milk, shredded rotisserie chicken and ramen noodles to the pot. Sprinkle in cilantro. Add more salt and pepper.
4. Allow to simmer until the noodles are cooked. Serve with more cilantro and a spritz of lime.
