Peppermint Whoopie Cookies
Melt 1 stick butter with 1/2 cup water. Melt 2 oz bittersweet chocolate and mix. Add 2/3 c cocoa powder, 1/2 c buttermilk (1/2 c milk, 1/2 tsp vinegar and let sit), 2 large eggs, 1/2 tsp baking powder and salt, 1 tsp baking sofa, 1/2 tsp peppermint extract. Beat with mixer until blended. Add 2 cups flour, 3/4 cup chocolate chips and mix. Bake 400 until cookies bouncy when poked. Cool. Frost with homemade icing from M+M Candy Cane Cookies and top with crushed candy cane.
