Mix 1 cup of mashed potatoes with 1 cup pumpkin purée and 1 egg, then mix in 1 & 1/2 cups flour and some salt and pepper. Place super sticky mess on cutting board with more flour and roll a few times until it comes together. Cut in quarters, take each part and roll into long rope and cut in 1 inch pieces. Place in boiling water till floats, about 3 minutes, then toss into melted butter that browned in pan with chopped sage and pecans. Top with Parmesan cheese.
