In a bowl, whisk crème fraîche, three eggs, capers, salt, freshly chopped chives, and pepper until very smooth. Pour into a very hot skillet of melted butter and use a spatula to gently scramble the eggs into large curds. Remove from pan and wipe out the pan. Keep eggs warm.

Meet butter in the skillet and toast two pieces of bread. Remove from pan. Divide eggs between the bread and top with smoked salmon. Serve with a small salad!
