Roasted cauliflower with gremolata. Toss cauliflower florets with olive oil, salt and pepper. Roast @ 425 for 30 minutes. Toss halfway. Make a gremolata with chopped parsley, minced garlic, lemon zest and a bit of grated parmesan cheese. Toss warm cauliflower with gremolata.
