Combine a handful of lightly chopped fingerling potatoes + tricolor potatoes in a bowl or large ziplock. Add carrots and red onion. Shake in olive oil, coarse salt, freshly ground pepper, chili powder, turmeric, and a dash of cayenne. Roast for 30-45 minutes on high temp, such as 425-450, until slightly brown and crispy. By now they will be smelling delicious. Sprinkle some chopped parsley on top as garnish. Then enjoy! 😍
