Sauté a thinly sliced onion with black and green cardamom and a bay leaf. Add cumin, salt and turmeric. Then add peas and rice and water based on the amount of rice you used. Boil off most of the water, then lay smoked haddock fillets on top and steam the rice and fish. When ready, skin the fillets, stir the flakes into the rice along with finely chopped parsley. Serve with a dollop of yoghurt and mango chutney.
