Whipped sweet potatoes with parmesan, thyme, garlic and green onion. Roast sweet potatoes (skin on) in a 400 degree oven for 1 hour. Let cool and then remove skin. Slice into large chunks and set aside. Meanwhile, In a medium saucepan or dutch oven, heat about 1/4 cup unsalted butter and 1/2 cup heavy cream with 2 whole peeled garlic clove and 4 sprigs of fresh thyme. Bring to a simmer and let sit for at least 15 minutes to allow the thyme to infuse the cream. Remove the thyme sprigs. Add the peeled roasted sweet potaoes to the saucepan with the cream and garlic. Add 1 tsp kosher salt and 1/2 teaspoon freshly ground black pepper. Mash with a potato masher. Then whip the potato mixture with a hand blender until light and fluffy. Fold in 1/4 cup grated parmesan and 4 sliced green green onions. Top with more sliced green onions. I served this tonight with "Zuni" Roasted chicken and roasted brussel sprouts.❤️
