Seasonal Raw Veggie Salad with Warm Chèvre.
Always best if you can find local produce from a Greenmarket.
Here I chose:
Watermelon radish, celery root, microgreens, chiogga beets, fennel and carrots. I also added shaved baby artichokes and blood orange (not from the Greenmarket, but couldn't resist).
Shave all vegetables with a mandolin or slice thinly with a very sharp knife. Trim artichokes and shave center (remove choke if any exists). Have a cold water bath with lemon handy for the artichokes (they oxidize quite quickly- pat dry before adding to salad) Leave some veggies round and julienne others. Remove skin and pith from orange and slice or cube.
Toss all with some hazelnut oil and champagne vinegar (cider vinegar works well here, too). Place a large handful on a bed of your favorite salad greens. Add flaky sea salt and fresh ground pepper.
Toast crusty sourdough slices and brush with good olive oil, top with Chèvre and broil for 2 minutes. Enjoy!
