I don't like on central time, in fact we just are, we eat what's good not what is trending. I know it's passé now, that eating bulls nuts and fish guts is something we did oh so long ago but good is effing good and Pieds de Cochin Farcis is. These trotters will sous vide for 72 hours before the bones are removed and then the feet are stuffed with a ham, shallot, and parsley stuffing and roasted until the skin is crispy like a pork rind.
