Rice/pork/cranberry stuffed squash
I threw some halved carnival squash in the oven at 400 for about 40 minutes while I made filling.
Browned some ground pork with celery and fresh rosemary. Added a little black pepper, salt and thyme too. Added cooked brown rice and halved cranberries when pork was done.
Then put the mixture in the nearly done squash halves and cook for another 15 minutes or so.
