When it was getting late and I didn't feel like taking the (tiny bit more) time to make additional veggies like the mushrooms and shishito peppers currently waiting patiently in my fridge, dinner ended up being just steak and lots of carrots. Bistro steak seasoned with cumin, chili powder, salt and pepper, seared to the best crust I've yet accomplished, then finished in the oven. Carrots roasted with olive oil, salt, and fresh grated ginger. All topped with just a touch of cilantro, because brown and orange needed a bit of green to look oh so pretty.
