Pho inspired noodle soup.
How to make pho without a recipe:
Simmer 4 cups broth of choice (beef, chicken, vegetable) with ginger, garlic, black pepper, chili and any other aromatics you prefer, lemongrass is great if you have some on hand.
Prepare noodles by covering with boiling water for a few minutes. I used brown rice vermicelli here, soba noodles are also great.
Add vegetables to your broth and allow to cook for a minute or two until just tender. I used shredded cabbage, thinly sliced mushrooms and a few handfuls of spinach. Shredded carrots, broccoli, bok choy are all great options, whatever you have.
Portion prepared noodles into bowls. Ladle in your broth and vegetables. Top with cilantro, green onion, lime, soy sauce and sriracha. Slurp away!
