Hew and Ruh : Icy Mango Purée over hot and sweetened Vermicelli. An Indian starter/dessert. Vermicelli : add 3 heaped T ghee to a non stick pot. Pour in half a box superfine Vermicelli. Braise till golden on medium heat. Add 350 ml water and 3 T castor sugar. Continue adding water to get Vermicelli softened. Ruh: Liquidise about 5 large peeled and chopped Mangoes and add castor sugar to sweeten if desired. Chill. Serve hot Vermicelli with cold Ruh.
