I hate throwing away the discarded sourdough starter at feeding time...so it becomes no-knead bread! 1 cup unfed starter, 1 cup water (warm if you want bread fast, colder if you want more time), 2 cups flour of choice, sprinkle some seeds, salt and give it a dash of malt extract or sugar and some dry yeast if you don't have absolute faith in your starter (not more than a teeny pinch!). Mix it all and dump in a loaf tin, bake when you feel it's good to go...40-ish mins at 385F.
