Homestyle beef stroganoff. Cut up and chuck roast and coat with flour and your choice of seasonings. Brown in fat of choice in batches and spoon onto plate. Add onions to pan with ample garlic and mushrooms if you remember them at the store like I didn't do (😆). Sauté a minute or two, then add a sprinkling of flour and stir. Add in beef broth and cream of mushroom soup, then season to taste with lots of black pepper and some salt. Simmer on low until meat is very tender (2.5 hours for me). Add in sour cream right before serving. Goes great over wide egg noodles or potatoes.
