Leftover falafel and celeriac fries turned into a delicious breakfast hash! Sautéed onions, garlic, and fresh rosemary, chopped up the falafel and celeriac fries and browned them with the onions before pouring whisked eggs on top. Cooked low and slow, like a frittata before scrambling it all together. Served on a bed of fresh kale chips for a little crunch!
