Sunday roasted chicken. Rub with olive oil and salt, or butter for an extra crispy skin. Season with rosemary, shower with lemon juice. Roast at 475.

Beautiful bird! What's the duration at 475F? Do you reduce oven or tent with foil to prevent burning? Also, just confirming that the bird's in a cast iron skillet. If so, I think it should conduct heat more efficiently than a regular roasting pan. I think this may be my Sunday roast this weekend!

I have perfect results every time roasting at 475F. I massage a small 5lb bird with olive oil, sprinkle with salt and place in the oven uncovered in a cast iron pan for 45 minutes.
Incredibly juicy with a crisp brown skin. Technique from Pen & Fork. Enjoy!
