Beautiful bird! What's the duration at 475F? Do you reduce oven or tent with foil to prevent burning? Also, just confirming that the bird's in a cast iron skillet. If so, I think it should conduct heat more efficiently than a regular roasting pan. I think this may be my Sunday roast this weekend!
I have perfect results every time roasting at 475F. I massage a small 5lb bird with olive oil, sprinkle with salt and place in the oven uncovered in a cast iron pan for 45 minutes. Incredibly juicy with a crisp brown skin. Technique from Pen & Fork. Enjoy!
