There's a million opinions on how to get the best farinata... but after trying a few, I found that when I mix 1c chickpea flour with 1.75 cups water and 2 tbsp olive oil in the morning, cover with a dishcloth, and then 4-8 hours later come home to blast the oven at 425, it works just fine. Before I put it in the oven, I add another tbsp or 2 of oil, some salt, lemon pepper + whatever veg I have. 20 minutes later and this comes out!
