Had some leftover sautéed carrots, onions and garlic in the fridge. Tossed them in a pan with walnuts - worked so well with the honey goat cheese on my SRSLY gluten free bread rolls.

Getting a meaty, satisfying lunch is hard as a gluten free vegetarian, but this really hit the spot!
