Roast cherry tomatoes in a 375 degree oven with a bit of coconut oil for about 15 minutes
Wilt fresh spinach in a bit of coconut oil
Add 1/2 cup of yellow polenta to 2 cups boiling water and salt. Let cook for about 2 min, stirring. Set heat to low and stir about every 5-7 minutes for a total of about 30 min. Add butter a pat or two at a time to desired amount (and maybe add some cheese!)
Add poached egg and bacon on the side.
