Once folded, pan fry until golden, add a splash of water and cover for 1-2 min until steamed, uncover until bottom is crisp.
Serve w soy sauce or other dumpling sauce. Mine is an unmeasured combination of soy, sesame oil, Chinese black vinegar, brown sugar and a bit of mirin.
