Started out wanting to use some leftover broccoli stems and came out the other side with veggie fritters.
Grated broccoli stems and carrots, red peppers, caramelized onions and leeks, kale, parsley, feta, panko, eggs, and flour. S+p and lemon for some bite.
Next to that is some left over pork shoulder (a bit overcooked) rehydrated with NYT's simple homemade bbq sauce. I simmered the sauce for closer to an hour.
Big squeeze of lemon over it all.
