Poached egg on fried fingerling potatoes with shallots...my son taught me how to make perfect poached eggs when he was working in a restaurant as his first job about 20 years ago. Our family, and his, make our poached eggs in slowly bubbling water with a splash of white vinegar. We slip the cracked egg from a small bowl into the water for 2 minutes and 30 seconds and it is always warm and runny in the center. Perfect over anything or by itself.
