Panelle, aka chickpea fries!
Boil 2 cups water and stir into 1 cup chickpea flour. Return to pot and simmer for a minute with salt and pepper and whatever spices you want to add (I used za'atar and red pepper flakes) with a glug of olive oil. Pour into a square 8" pan and chill in the fridge until solid.
Cut into fry shapes and fry in oil for a few minutes (never tried baking). Sprinkle with more salt and pepper out of the fryer and serve with something like harissa or a garlic/lemon/za'atar yogurt sauce.
