A Winter Root Cellar Roast
There is an endless list of flavorful ingredients to braise with a roast. Where to start? Ingredients you already have on hand.
Apples, potatoes (less starchy variety like Yukon), celery (or celeriac), garlic, chuck roast (2.5 lb), salt, pepper and 1/3 cup water.
I started simple - no broth, no searing, no herbs - just toss with the roast, season generously with salt and pepper. Bake at 350 for the first 30 minutes (to warm the roast in the the cocotte or dutch oven), then turn down to 250, cover and bake for 3 hours or longer until it falls apart.
