Had half of a ginormous cauliflower head left over from another night. So I tried Paul Bertolli's recipe. Onion, cauliflower, and water. Wow! Salt, pepper, and EVOO to taste and here I topped it with roasted wild mushrooms.
It's funny because after I made the recipe I read a lot of the comments from people online and a lot of people just found it disappointing.. I think it's a fantastic recipe in that it is simple and really highlights the vegetable. I will say that I would probably always serve it topped with something like the mushrooms or crispy, spiced chickpeas.
