This pomelo and avocado salad is a burst of bright flavors for the winter palate. I’ve even taken to eating this salad for breakfast. Pomelos are native to Southeast Asia have a mild floral flavor, less intense than its younger cousin grapefruit.
Toss together Arugula (a slightly spicy winter green), a cut pomelo, a sliced avocado, and roasted pine nuts. Drizzle with olive oil and honey, and salt and pepper to taste. Avocado toast on the side of course.
