Bittersweet Cocoa Fudge Sauce. The ratio of ingredients by volume is equal parts unsweetened cocoa powder, sugar, and cream, and 1/3 part butter with salt and vanilla to taste. Method: Mix cocoa and sugar in sauce pan, stir in enough of the cream to make a thick paste before stirring in the remaining cream and butter pieces. Heat and stir over low to medium heat until the sauce is very hot but not simmering. Add tiny pinches of salt to taste and a little vanilla. Serve over ice cream or refrigerate and reheat gently in water bath or microwave when needed. PS I often bump up the amount of cocoa a tad...
