Living in France means you miss heat in your food.. so I made myself some curry.
Sauté chilies in oil, toss in sliced garlic. Then sweat onions. Add veg and chicken: eggplant, carrots, mushrooms, dark meat chicken. Salt/soy sauce, curry powder, ginger paste, garlic paste, then finish with cream (coconut cream if you have it). Meanwhile fry up the chicken skin. Dish out over rice, top with crispy skin cracklings and cilantro. 👌🏻
