Apple cabbage slaw with curry honey mustard vinaigrette
A bright crunchy slaw that is refreshing after the holidays.
For the dressing:
Whisk together olive oil, lemon juice, wine vinegar, Dijon mustard, honey, curry powder, cumin, chili flakes, salt & pepper. Give it a taste and adjust to your liking. I add the raisins to the dressing so they absorb some of the dressing and plump up.
For the slaw:
Shredded green cabbage, grated carrot, slivered red onion, julienned apple (I used a Granny Smith), green onion and raisins (see above).
