Stuffed Peppers Asian-Style - I'm so ecstatic with how these turned out! I made the recipe up on the fly as I was on the hunt for a healthy low calorie meal for the family. After spending NYE weekend in Nashville and enjoying loads of all things fried, we really needed to eat clean again. Usually stuffed peppers seem really heavy with lots of thick sauce and tomato. These are very light and fresh, but still a very hearty meal. Made with ground turkey, kale, brown rice, quinoa, and flavored with a number of Asian spices and sauces. Yummy!
