Roasted baby eggplant.
Coat bottom of baking sheet with olive oil. Massage the baby hemispheres with the olive oil and lightly salt. Place eggplant flat side down before baking at 375 degrees for 40 minutes. Flip over after baking to cool. Eat their delicious innards alone or season with spices and yogurt. I'll actually be using these for a dip. Ooooh dip.... my favorite food in the world! Dip.. and vessels for dip. So many combinations and varieties.
