Chickpea & Roasted Veg Couscous was the solution for this week's Pasta Night when I really wanted something light and fresh in the middle of winter in MN! (A very specific dilemma, I know. 😉)

Prepare some dried plain couscous according to package directions and roast some assorted veg in a hot oven (here: grape tomatoes, sweet red and yellow peppers, and pitted olives. Red onion would have been nice, too!). When everything is charred and softened, toss all of it together with a can of cooked chickpeas and feta (if you have it - I only had Parmesan on hand), then drizzle on a lemon-garlic vinaigrette and season to taste. Tastes light and Mediterranean and not at all like winter in MN! 👍🏻
