#notsaddesklunch Veggie-loaded stuffing with ham
Add shaved Brussels sprouts, cubed squash, and a can of beans (including bean water) to a roasting pan of boxed stuffing mix. Prepare the stuffing for oven-baked instructions and bake as directed.
Top with sliced ham or turkey leftovers.
Note: For this version, I used the cornbread stuffing from Trader Joe's, along with their Brussels sprouts and butternut squash zigzags.
