Love squash season! Acorn squash with sausage no grain stuffing. Halve acorn squash, roast pan side down with olive oil for 30 minutes until soft at 400'. In a pan, sauté sausage and remove from pan. Add chopped carrots, onions parsnips, cremini mushrooms, thyme, salt and pepper until soft. Add sausage. Once squash is out of oven, put stuffing mixture in and serve. Top with parsley.
