I made a sauce by heating 1/4 c EVOO and adding 4 minced garlic cloves and 1/4 tsp crushed red pepper and let simmer 2 minutes. Then add 1/2 c dry white wine, 5 tbsp unsalted butter, 1 tsp kosher salt and 1/2 tsp freshly ground black pepper and let butter melt then mix in arugula and toss with 1 lb cooked pasta and sautéed sweet Italian sausage and 1/2 cup Parmesan. Enjoy!!
