Spicy carrot and kale fritters
[my amounts for 6 fritters]
Roughly equal amounts shredded carrots [3 large] and chopped kale [1-2 cups].
Minced ginger [approx 1 T].
Minced Serrano or jalepeno pepper .
Coarse ground coriander [1/2-1 tsp].
Powdered turmeric [1 tsp].
Enough eggs to stick mixture together .
Salt and pepper.
Mix everything together, form patties and fry in your oil of choice [coconut oil].
Delicious topped with plain Greek yogurt. Another great addition would be cilantro if you have it.
