FRESH BOK CHOI WITH TURKEY BACON: Finely chop bok choi, garlic, cilantro and green onions. Chop turkey bacon finely or coarse, (whichever you prefer). Render in olive oil until lightly browned and add ALL the fresh greens. Turn them over until well coated with the oil in the pan. Add a little sea salt and cracked black pepper to taste. Cover pan and allow greens to steam for 5 minutes. Plate and serve! Add fresh spinach for a really great flavor profile.
