Perfect date night dinner. Grilled NY strip with chimichurri, coconut cauliflower purée, roasted plantain, and citrus collars greens.
Steak - I marinated the steak in red wine vinegar, Worcestershire sauce, garlic, salt & pepper for a few hours and grilled it. Until it was the perfect medium.
Cauliflower purée - after cutting up and boiling he cauliflower, I blended it with Almond Breeze coconut milk, parsley, roasted garlic, S&P, and butter.
Citrus collard greens - I put about 2 cups of orange juice in a skillet with shallots, red pepper, and the collard greens. Seasoned with S&P, and garlic powerer.
Plantains- Roased them in coconut oil with a little bit of chicken stock (moisture).
Chimichurri- 2 jalapeño peppers (I usually use a Fresno), Italian parsley, oregano, cilantro, red wine vinegar, garlic, shallot, salt, olive oil.
